Avocado smoothie.

If you've been reading this blog for a while, then you know how much I love avocados. And that I put them in everything...even smoothies. I would go so far as to say my love of them borders on addiction, and everyone who knows me would probably agree.

Case and point: the other day, I was sitting at my parents' kitchen table and spotted an avo in my mom's fruit basket. During the winter in Oklahoma avocados are hard to come by, so a good one is an absolute treat. And this one looked REALLY good. I couldn't even think straight, I was so excited to cut it open and behold it's beautiful green flesh. See - I really am addicted.

Anyway, while Toby and I were at the market yesterday, I spied some of the prettiest little avos I've ever seen, and just knew I'd bring them home and blend them into our favorite spring and summer treat : the avocado smoothie. I've posted a recipe for one before, but I felt it was deserving of a second post (with a few minor changes).

A note on selecting avos -- the smaller the better. They should be just barely soft to the touch, and still have a tiny bit of green on them.

So here it is, a delicious treat the whole family can enjoy together. Cheers to the incredible avo.

1 ripe avocado
1 banana
1 kiwi
raw almond milk*
raw honey or agave

Begin by cutting into the avocado and scooping out the flesh. In the pitcher of a blender, place the avocado, banana, kiwi (peeled), 2 teaspoons of honey or agave and about 1 cup of almond milk, to start. Blend it up, adding a little more almond milk until your desired consistency is reached (I like mine super thick). Divide between two glasses, and serve.

serves 2.

*feel free to sub the raw almond milk for milk of your choice (soy, hemp, cow's), for a non raw version.

Yum - this looks delicious! Good idea to use banana and kiwi. I love avocado shakes at Vietnameses restaurants, but this version seems much healthier!

I've heard of avo smoothies before and it's always seemed a bit odd, but you've inspired me to give it a try!

Vanessa - I hope you make one :) I can't emphasize enough, just how delish they are!

Kathleen - Did you?!

Gaby - That makes me happy :) Be sure to let me know what you think.

Love Again - I only have 3 on hand right now, so I'm jealous of your bowl full ;)

Oh! I am completely obsessed with avocados also, I could eat them plain for meals! :) This looks sooo amazing. It totally makes sense that the smaller the better, but I have one more question. How do you know if an avocado is ripe? Will it be on the softer side? Will it be more or less green?

Really really excited to try this smoothie sometime!

I just tried this and - oh my yum! So good! In future, I may try something besides the kiwi though as they make my lips itch (odd, I know). Any substitute suggestions?

Thanks!!

My first taste of avocado smoothies was in Paraguay, where the avocados are different and so are the bananas. I still dream about it. It was sooo perfect! I haven't tried to duplicate it here, because I'm so worried I'll disappoint myself with the US produce.

I need to get over it. :)
