Raw Peach & Blueberry Cobbler.

Berry season is finally upon us.  Andreas, Lucía and I brought a basket each of local blueberries and peaches home from the farmers market this afternoon.  While we usually eat our fruit plain or with a little yogurt and honey, Andreas suggested we make a "treat" with them today.  So, I decided to make us little individual cobblers.  The three of us went to work in the kitchen, slicing the peaches and putting the crust ingredients in the food processor.  Andreas was skeptical at first, but once he tasted the crust, he got the biggest smile on his face and was so excited to try the finished product.  After he did, he declared it "the best cobbler he'd ever had".  Which may or may not be saying a lot, considering he's only tasted real cobbler once or twice in his life :)

But I have to agree, these little cobblers are delicious, and perfect for summer.  and berry season.  This summer, instead of baking with your berries, try eating them in a raw dessert like this (or my raw berry pie) .  Since it's made of just fruit, almonds and a little honey, it'll leave you feeling satisfied, instead of sick.

If you don't care for blueberries or peaches, almost any summer fruit will do.  Plums, apricots, nectarines, raspberries, blackberries --all of them will compliment the crunchy crust.  Oh, and if you like coconut, you can even throw a handful of it in as well.


1 half pint blueberries
3-4 peaches
2 big handfuls of dry roasted (or raw) almonds
4 large, pitted deglet noor dates
3 teaspoons raw honey
pinch of sea salt

Begin by rinsing the fruit.  Slice the peaches, and place them in a bowl with the blueberries.  Next, place the almonds and dates (and sea salt, if the nuts weren't salted) in the the bowl of a food processor.  Process until it resembles a course meal.  Drizzle in honey (to taste).  In ramekins or small bowls, layer the peach slices and blueberries.  Top with the nut mixture, and an extra drizzle of honey if you like.

It sounds so delicious! I love cobblers, but I've been allergic to oats for years now, and it makes me sad when I see raw recipes with oats. I had to look closer at this post, because the pictures looked so beautiful, and how wonderful to find a way for me to still have this! Never would have thought to just do almonds and dates. Love it!
